Tortellini Spinach Soup!
Welcome to my first blog post! I am so excited to share my
easy recipes with you. After sharing recipes with friends and family I decided
to make a simple blog to share my recipes with anyone and everyone. Nothing
about this blog or the posts will be fancy, everything is practical and
realistic for busy people like me!
I wanted to start out my blog with a recipe I had never made
before: Tortellini Spinach Soup! I am NOT a huge soup person so you won’t see
tons on my blog but this cool weather after Christmas had me in the mood for
warm comfort food. Soup never seems to keep me full but one bowl of this soup
and I was stuffed!
Ingredients needed for the recipe:

One
19 oz. bag of frozen cheese tortellini
·
One
16 oz. bag of frozen whole leaf spinach
·
Two
cans of diced Italian style tomatoes
·
32
oz. unsalted vegetable stock
·
One
block of low-fat cream cheese
·
One
tbsp. Italian seasoning
Instructions:
In your slow
cooker add the stock, tomatoes, cubed cream cheese, and Italian seasoning. Mix
well and let it cook on low for 5 hours. After cooking on low for 5 hours stir
in the frozen spinach and tortellini and cook for 1 more hour.
TA-DA, you’re
done! An easy and filling meal with minimum ingredients. I hope you enjoy this
easy meal as much as my husband and I did!
