Crockpot Creamy Chicken


This my favorite easy recipe and I have made this since college. This week is still a slow cooker recipe but I made it in my Instant Pot because honestly…my crockpot was dirty. This is a really rich recipe but totally guilt free. Creamy Crockpot Chicken is my life saver trying to lose weight and be healthy but still have a meal that doesn’t taste “healthy”. I love to serve this over brown rice like pictured below but it can also be served over pasta or spaghetti squash as well.

Prep Time: 5 minutes
Cook Time: 8 hours
Yield: 10 servings
Serving Size: 1 cup

 Ingredients needed for the recipe:
·         4-6 frozen chicken breasts
·         2 blocks of low-fat cream cheese
·         2 cans of low fat cream of chicken
·         2 packets of Italian dressing, dry mix
·         8 cups of frozen broccoli florets



Instructions:
Coat the crockpot or instant pot with non-stick spray. Place the frozen chicken on the bottom and then add the dry mix dressing, cubed cream cheese, and the cream of chicken soup. Set to slow cooker low for 8 hours. At 7 hours or once the chicken is fully cooked, shred the chicken and stir in the frozen broccoli. Cook for one more hour or until broccoli is warm and serve over rice, noodles, or spaghetti squash.
